Kitchen Prep Job Description: This positions primary responsibility is to provide timely, accurate preparation of food items. You will complete par levels for prep as well as deliver finished products to the Replenisher. Prepare all the marketplace salads, braises, Soups, Mac Cheese and Land/Sea items, etc for the service line by following exact recipes as requested by the Replenisher Prepare all of the marketplace batches for replenishment by following exact recipes and par levels Turn on all kitchen cooking/holding equipment and is trained on the safety guidelines for this equipment Put away the produce order and delivery from commissary. Must exercise proper FIFO and labeling of these items Prepare the Land and Sea section of the line following recipes and portion guidelines Bring to temperature: Mac N Cheese Braises, etc. and puts in Dutch Ovens and places on induction plates at proper temperatures. Must exercise proper heating techniques according to Health Department code Prep all ingredients not made at Lemonade Commissary by exercising proper recipes, portioning and cutting, cooking techniques Walk the line to view your food ensuring the best product available at all times Replenish all sauces and dressings on the service lines, making sure to clean used containers Clean/sanitize and organize Walk-in cooler, coolers and prep shelves/tables. Properly labels and rotates all products in Walk-in cooler, coolers and prep shelves. ()
