If quality-oriented, dependable, and team-player describe you, we invite you to apply! Position Sous Chef Job Summary Serve as second-in-command of the kitchen. Assist the executive chef in supervising food production for all food outlets, banquet events and other functions at the club. Supervise food production personnel, assist with food production tasks as needed and assure that quality and cost standards are consistently attained. Job Tasks Supervises and leads kitchen staff in the daily preparation of all menu items and specials ensuring that methods of cooking, garnishing and portion-sizing are according to kitchen standards. Assists the executive chef with daily and weekly ordering, delivery confirmation, and storage of needed product for all areas of food service including a la carte dining, banquets and ancillary venues where food is provided. Assumes complete charge of the kitchen in the absence of the executive chef. Assists executive chef with supervision and training of staff ensuring proper kitchen standards are met, and elevating staff skills. This includes but not limited to: Conducting corrective action to individual staff who are not performing their job correctly or professionally; Creating incentives to ensure that workers are putting their best effort forward. Consistently maintains high standards of quality, cost, attractive plating and flavor of foods. Develops and posts a weekly staff schedule to maximize productivity and high quality standards, while maintain payroll costs. Makes recommendations for maintenance, repair and upkeep of the kitchen and its equipment. Performs the required administrative duties as assigned by the executive chef. Is familiar with all of the daily operations of the kitchen, and demonstrates ability to work in any station as assigned by the executive chef. Communicates with front of house managers prior to and during events and attends scheduled pre-shift meetings. Assists in maintaining security of kitchen, including sanitation practices, personal hygiene, safety of equipment and food. Expedites food orders during peak service hours and acts as intermediary between the kitchen and dining staff. Checks mise en place before service time and inspects presentation of food items to ensure that quality standards are met. Reports all member and guest concerns to the executive chef and assists in resolving and assists in resolving member issues. Monitors kitchen staff time cards to ensure compliance with posted schedule and required meal and break periods. Submits ideas for future goals, operational improvements and personnel management to executive chef. Performs other related tasks and projects as assigned by the executive chef. Reports To Executive Chef Supervises Supervisory duties are included in this position. Physical Requirements and Work Environment Frequent standing, walking, lifting, bending, stopping, squatting. Frequent work in warm and cold environments. Must be able to lift 40 pounds and stand for extended periods of time. Compensation and Benefits Pay range starting at a minimum of $50,000 annually, and will be based on experience.
